Yes, I am that mom. I walk into the restaurant with a container of pancakes in my bag and I have zero shame about it.
My son is allergic to eggs. That sounds manageable until you realize that eggs are in almost everything, and nothing makes that clearer than trying to order breakfast anywhere.
Pancakes are supposed to be the easy order. The safe thing. The thing every kid at the table gets while the adults figure out what they want. But standard pancakes have eggs. Most restaurant pancakes have eggs. And watching your kid sit there while everyone else at the table is eating a stack of something warm and fluffy is not something I was willing to accept as just how it goes.
So I found a vegan pancake recipe that works. I make a batch before we go. I bring them in a container. I ask the server to warm them up, and they always do, because people are generally kind when you explain what’s happening.
And my son eats pancakes with everyone else at the table.
Is it extra work? Yes. Is it a little awkward to pull a container out of your bag at a restaurant? Also yes. Do I care? Absolutely not.
The goal was never the easiest version of brunch. The goal was for my kid to feel like he belongs at the table, with the same food, having the same experience. That’s worth a batch of vegan pancakes and a little side-eye from the hostess.
Allergy moms know. Finding vegan pancakes that actually taste good is its own project. But once you do, you hold onto that recipe like it’s a family heirloom.
If you’re navigating egg allergies and want the recipe, drop a comment and I’ll share it.
